The Wine & Truffle Company began cultivation of the French Black Perigord Truffle at Hazel Hill Estate Manjimup in the southwest region of Western Australia in 1997. Today the company is the single largest producer of fresh truffles in the Southern Hemisphere, with over 13,000 hazel and oak trees.
The first black truffle – a single 168 gram truffle - was discovered in July 2003. Since that time, the annual harvest has increased every year with an expectation of a harvest in excess of 2 tonnes for 2011
